MOTHER’S DAY DELICIOUS FISH IN DELICATE SAUCE!!!!

Mother’s day was wonderful with my kids ( two couldn’t be with us) and my grandchild, my ex and one of my daughters in law’s mother. We had Mojitos, that delicious Cuban drink I love so much :) We also had steamed mussels and clams and calamari. Flan for dessert with ice cram and carrot cake all on a pile, it was really yummy….

I made one of my mother’s recipes from Spain- a Delicious recipe for fish fillets, very delicate and fast to make. And we all had fun eating it with lots of French ( or was it Cuban) bread. :)

I will share the recipe, but don’t tell anyone because it is a secret…shhhhhhhh……….:)

SIMPLE DELICIOUS FISH IN DELICATE SAUCE:

- 7 smashed garlic cloves or more if you loveee garlic as we do

- 1 tsp red hot pepper flakes, more if you like it hotttt

- 2 medium potatoes, peeled and cut in irregular small pieces

- 4 of Any kind of fish fillets, cut is same size pieces (thin white flaky referred)

- 1 tsp red paprika

- Salt to taste

1 tbsp olive oil

- 3 tbsp flour, to drudge the fish in it

In a pan on medium heat add olive oil and when hot add the garlic cloves
smashed, peeled and then sauté until golden. Add pieces of hot red peppers flakes and stir.  Add pieces of potatoes, the smaller and thinner the fast they will cook and the faster the dish.

Stir adding salt and paprika. Don’t burn the paprika because it will turn bitter, so just stir fast and add the water. Sauté a little and then cover them with water, let them boil over high heat and taste for salt, adding if necessary.

When the potatoes are cooked ( test with the point of a knife) if there is not much water add a little more so later you will have sauce to eat with your bread.  Boil and taste for salt. Cut each fillet (thin pieces-fillets) in 3 pieces or four if you want them smaller and drudge in flour both sides. Then put the pieces of fish on top of the boiling sauce. Shake the pan (don’t burn yourself) and let it cook on medium-high for 3 minutes then turn the fish and cook for another 3 or 4 minutes, stir so the sauce doesn’t stick to the bottom of the pan. The fish will be white and the sauce will thicken due to the flour.

Remember that fish cooks really fast and if it is overcooked it turns dry and hard.  It is now ready, so enjoy with your bread (used for dipping answhipping the pan clean) and should I say a very cold beer?

You can add at the end chopped fresh Italian Parsley( Flat leaf) for taste and presentation.
